Well it's neither vegan nor vegetarian, but here it is: Take 6 slices good bacon and slice thinly crosswise. In a large skillet on medium, cook it until it's nice and browned, about 8-10 minutes. Add a can of stewed tomatoes and a couple of small bags of frozen green beans. Toss in about a cup or more of chicken broth. Cover, and let cook, stirring every once in a while. Should take about another 15-20 minutes.
