Using White-Out
Changing typewriter ribbons/font balls
Making copies with carbons
Laying out documentation on a light table (Letraset, anyone?)
Lettering maps by hand
Scribing 
Typing on a manual typewriter
Drawing wire from an ingot by hand
Rewinding cassette tapes that got eaten by the tape player
Setting the stations on those old car radios
Using Unix to create GIS layouts (proto-HTML. Oy!)
Answering the phone in a professional manner, and taking complete messages
Making change without a cash register
Putting multiple people on hold on an old-fashioned PBX system.

Using a waxer to layout copy!

Oh, I had finally forgotten that job where I had to use the waxer at least 3 days a month...and it wasn't that long ago...

fixing the color on the TV
sizing blue jeans before you wear them the first time (multiple washes, OMG)
